Feta cheese is a salty cheese that is popular in the cuisine of Central Asia, Greece, and some Eastern European countries. It is sold in cubes or crumbled. Sometimes it is made with sheep's milk. But, in the US, the most common kind is the one made with cow's milk.
As it ages, the flavor of feta cheese intensifies. It is one of my favorite cheeses because it is so versatile. You can use it in Turkish pide, on top of salads, and even to make scones.
Feta cheese is the perfect cheese to have on hand if you want to give your recipes a Mediterranean flavor. This is also a cheese that is not too melty, so it is in perfect for recipes that call for a cheese that melts slowly.
